Ingredients:
For the Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

For the Skewers:

  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 bell peppers (red, green, or yellow), cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1 zucchini, sliced into rounds
  • 8-10 wooden skewers (soak them in water for 30 minutes before using to prevent burning)

Instructions:

  1. In a medium-sized bowl, whisk together all the marinade ingredients. This includes the olive oil, lemon juice, lime juice, minced garlic, chopped basil, chopped parsley, dried oregano, dried thyme, salt, and black pepper.
  2. Place the chicken cubes in a separate bowl and pour half of the marinade over them. Make sure the chicken is well-coated. Cover the bowl and marinate the chicken in the refrigerator for at least 30 minutes. You can marinate it longer for enhanced flavor, even overnight.
  3. While the chicken is marinating, prepare the vegetables. Cut the bell peppers, red onion, and zucchini into 1-inch pieces.
  4. Once the chicken has marinated, remove it from the fridge and let it come to room temperature for about 15 minutes.
  5. Preheat your grill or grill pan to medium-high heat.
  6. Thread the marinated chicken, bell peppers, red onion, and zucchini alternately onto the soaked wooden skewers.
  7. Brush the skewers with the remaining marinade.
