Ingredients:

  • 4 salmon fillets (about 6 ounces each)
  • 1 pound fresh asparagus, tough ends trimmed
  • 4 cloves garlic, minced
  • 4 tablespoons butter, melted
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and black pepper, to taste
  • Lemon slices, for garnish (optional)
  • 4 large pieces of aluminum foil (about 12×12 inches each)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).

2. Prepare the Foil Packets:

  • Lay out four pieces of aluminum foil on a clean surface. Place a salmon fillet in the center of each piece of foil.

3. Add Asparagus:

  • Divide the trimmed asparagus evenly among the foil packets, placing them alongside the salmon fillets.

4. Prepare the Garlic Butter Sauce:

  • In a small bowl, mix together the melted butter, minced garlic, lemon juice, and fresh dill. You can season this mixture with a little salt and black pepper.

5. Drizzle and Seal:

  • Drizzle the garlic butter sauce evenly over each salmon fillet and asparagus. You can also place a lemon slice on top of each salmon fillet if desired.

6. Seal the Packets:

  • Carefully fold the sides of each foil packet over the salmon and asparagus, then fold the ends to create a well-sealed packet. Make sure there are no gaps for steam to escape.

7. Bake:

  • Place the foil packets on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.

8. Serve:

  • Carefully open the foil packets (watch out for steam) and transfer the salmon and asparagus to serving plates. You can spoon some of the remaining garlic butter sauce over the top if desired. Garnish with extra fresh dill and lemon slices, if you like.
